What A Great Idea
Whenever possible, when peeling citrus fruits such as lemons, limes or grapefruits, it is a great idea to leave on the pith, or the white part just inside the rind. This part of the fruit is super high in flavonoids, an anti-oxidant with wonderful health benefits. The pith also contains a higher concentration of Vitamin C than the fruit, as well as providing more fiber. Just make sure the slight bitterness of the pith does not alter the taste of whatever recipe you may be making. It is great in homemade Lemonade, when blended, but not the best in Key Lime Pie!

Fun In The Kitchen
Almost everyone loves chocolate, right? So why not have some fun with real chocolate straight from the source - Raw Cacao Beans! You can buy them in select health food stores, or see my favorite online sources on my website under Raw Food Products - Superfoods. They come as whole beans, broken up into little nibs, or even as raw cacao powder. You can eat it just as it is, or add the nibs to a frozen banana ice cream or smoothie. You can add the powder to an avocado to make chocolate pudding. Or make a chocolate sauce by adding maple syrup to the powder until it tastes just as sweet as you like it. A Super yummy Super food!

This Recipe Rawks
Thought I would share with you a quick and easy supper we just enjoyed tonight. This took literally minutes to throw together and was delicious and nutritious. Makes for a great easy salad you can prepare ahead of time to take in your lunchbox, too.

1 cucumber, peeled and diced
1 tomato, diced
1 avocado, peeled and diced
1 stick of celery, diced
Juice of half a lemon
Pinch of sea salt, to taste

Wash, peel and remove pit from food. Squeeze the lemon on top and add salt as desired. Lunch or Dinner is done!
