What A Great Idea
We recently discovered a little trick that makes juicing easier! For those of you who like to juice carrots, especially if you have one of those single or double augur juicers, which we recommend, if you slice the carrots first in the food processor and then feed the little carrot discs into the juicer, it is not only easier on the juicer, but faster, too!

Fun In The Kitchen
Let’s say you were an artist, and your paint palette had just four colors on it. You would probably experiment with unusual color combinations to see what you could come up with, right? Well, when you are a rawfoodist and your food palette consists of fruits, vegetables, nuts/seeds and seaweeds, you tend to do the same. And sometimes those unusual combinations end up creating something amazing! Most rawfoodists know the trick of adding fruit to avocados to make fruit puddings. But we have also added fennel tops to pineapple to make a really yummy smoothie. We put shredded carrot into our spaghetti sauce before we blend it to add extra nutrition. We added cacao nibs to our cantaloupe smoothie and it became a sweet chocolate milkshake. So feel free to experiment – sometimes you’ll create a delicious masterpiece!

You have my darling husband David to thank for this recipe! We made a carrot juice this weekend and had lots of pulp left over and my raw hubby created a brand new Sweet Carrot Delight for me, his raw honey! Who knew carrots could be dessert? I’ll share the love with you! Enjoy!

SWEET CARROT DELIGHT

1 cup of shredded carrots or carrot pulp

1 tablespoon coconut oil

1 tablespoon raw honey

That’s it! Stir together and be amazed at the yumminess. I don’t know whether to call it a carrot “applesauce” or to call it a “cakeless” carrot cake, but it was really delicious! We’ll be having this creation again and again!
